Housing suppliers in Taiwan usually considered kitchen as an accessory area in apartment dwellings, even inferior to the bathroom space. Inhabitants often suffered from kitchen problems, such as insufficient working area, poor traffic flow, and inadequate storage space. The purpose of this thesis i

s to explore the functional elements of apartment kitchen and how to satisfy the demand of residents, equipments and space. The author reviewed the literatures and analyzed the evolution of apartment kitchens in Taiwan, and established functional elements of modern kitchen: adaption, formation, enco

unter and interaction. The research processes consisted of questionnaire surveys and case study. The aspects of kitchen questionnaires include demographics, geography (housing-related), spirituality (function and activities), humanities (family and social interaction), and design (equipments and app

liances). The case study collected multiple kitchen plans and analyzed the functional elements of each design. Results: In geographical aspect, open concept kitchen and kitchen island gained popularity. In spiritual aspect, the decline of cooking and grocery shopping frequency has an impact on kitch

en functions and space planning. In humanities aspect, although cooking activities of the kitchen is reduced, non-cooking functions such as family meal, communication, social life, and lifestyle are valued by the interviewees. In terms of design, respondents agreed that kitchen needs to be more inte

raction-friendly, and kitchen area needs to be expanded rather than reduced. Shift of cooking energy and kitchen appliances make kitchen more flexible. The case study revealed apartment-style kitchen planning can be categorized into four types: kitchen being segregated from living area, kitchen faci

ng living area, kitchen being blend-in, and kitchen being dominant and elegant. The functional elements of each kitchen plan were examined and analyzed. Conclusion: To fulfill the functional requirements of modern apartment-style residential kitchens, unfriendly and isolated design should be elimina

ted. For kitchen equipments, designers should consider appropriate energy source and changes in food culture, cooking and eating habits, decorating tastes and social style.
